Kathleen had learnt the skills of cheese making locally as a young girl.
These skills were then put to very good use on their own farm making cheese from the surplus milk of the dairy herd. Her great knowledge has been passed down through four generations to the present day.
The village of West Pennard lies in prime dairy farming country, just over three miles west of the famous town of Glastonbury, while Cheddar (Gorge), home of the original Cheddar Cheese, is about 11 miles away north-northwest as the crow flies. Both lie on the edge of the lush Somerset levels, known locally as ‘Moors’: flat, low-lying, rich grass lands.
The Green Family have three dairy herds, contributing much of our milk to our own cheese dairy. This gives full traceability from cow to finished milk: good for the quality minded market of today!
